Round Griddle?

Round griddles, not shallow skillets.

I use CI rather than collect, so not real knowledgeable about round griddles. I want one for making omelets...larger surface and lower sides to better work the spatula. I'm speculating that with the larger surface (requiring higher heat) that they may have tended to warp more easily? Do you find a lot of round griddles with warped surfaces...thinking Griswold or Wagners? Am I going to be "hard pressed to find a flat surfaced, round griddle?

For omelets, you're probably looking for an "old style" round handle griddle, which is like a really shallow skillet. As opposed to a "new style" which has virtually no sides, just a lip to mainly contain cooking oil or butter, and more suited for non-liquid things or that which will "set" almost immediately. It should be noted CI isn't necessarily the best for classic rolled or folded omelets, as usually you want to reduce heat quickly after the initial set so as not to ultimately scorch the eggs; CI may not respond as well as you want.
 
PS. I was looking under the CI shapes section...I don't know if I've ever seen "low walled" skillet. What would that be, 1/2, 3/4, or 1in. lower wall?
 
I have 2 of the Griswold's. I inherited the small logo one. I saw the large logo one and couldn't resist, even though it was a bit pricey and needed cleaning in the E-tank. They are both (I hope I get this right) size number 109 and part number 202. The large logo one has two small pour spouts, a heat ring but no helper tab. (BB p38-39) The small logo one has a helper tab, no heat ring and no pour spouts. I don't know why they kept the same numbers. They are both about 10" dia on the cooking surface which makes them a bit larger than the current Lodge. They are fabulous for homemade corn tortillas. I cannot find a picture of the small logo griddle in the RB or BB but I expect it's vintage 1950s since I remember it as a kid. Great for pancakes.

So I assuming that I can't make omelets on this griddle?

Personally, I see no reason the pan in the first photo would not work for omelets. Second one might be a bit Trickey to keep everything in the pan. To be sure your fry pan, griddle or ?? sits flat on your stove grate, use a marble to level it up with. Much more accurate than a standard level that you don't know how accurate it really is.

I would suggest you get a lodge combo cooker. They have a deep skillet, and one with a very shallow skillet that is only about an inch deep. I use mine every time I cook eggs or bacon. I have been using mine for several years now, and it has never offered to warp. The fact that it fits perfectly in the deep skillet makes it a very versatile thing to have. I have also given some as wedding gifts to friends and family members. The last time I priced them (pre covid) the 10 inch was about $35. They also make a 12 inch version, but instead if the traditional handle you would expect on a skillet both sides has the small secondary handle you will find on the larger skillets.
