I found a Lodge recipe for Peach Crumb Coffee Cake and I adapted it to Pineapple, by draining and crushing a 20 oz Pineapple chunk cut can. It had a good flavor, but a couple changes for next time, a little juice in the topping, also juice in the batter as both were a little dry for my taste and maybe more fruit.
