That 's known as an odorless skillet. Used on a woodburning stove, the channel allowed the natural draft of the stove to conduct cooking odors down and out of the flue. Typically required a cover with a vent hole to work as intended.
This Victor wasn't Griswold. The other characteristics of the design are consistent with pans made around the time of the patent date on it. There are several patents for odorless cooking vessels, but I don't think any of them reference a Victor company.
