Default Spinach and Other Greens

I now know cooking spinach results in a chemical reaction that adversely affects the food. What about other greens such as Collards, Turnip, Mustard, Kale, Swiss Chard, etc.

Is it ok to cook any of these in "bare" CI?

I do collards all the time in a 2qt sauce pan with no ill effects. I do use bacon grease in them. Perhaps that helps.
