Default Berber Tagine

This is a recipe I make once or twice a month. Very simple, but very tasty. I currently cook it in a Iron Mountain #8 DO, but would use a #6 if I ever find one.

Ingredients:

1.5 - 2 pounds of lamb or beef, into 1 inch cubes
2 large yellow onions, quartered
2 cloves of garlic, minced
3/4 cup beef broth
1 tsp ground cumin
1/2 tsp hot Hungarian paprika
1/2 tsp freshly cracked pepper
1/2 tsp ground turmeric
1/2 tsp ground ginger
1/2 tsp of salt

I usually go a little heavy on the seasonings.

Preheat the DO in oven to 200 degrees.
In a separate bowl, mix the garlic and spices. Add meat and toss until meat is coated.
Add onions to the preheated DO. Pour beef broth over the onions.
Add meat on top of the onions.
Cook for 2 1/2 to 3 hours at 350. I usually stir once or twice during the cook time. The meat can get dry if you just leave on top of the onions during the entire duration of cooking.

I usually serve over some type of rice, or occasionally mashed potatoes.
