Default Masa Harina Cornbread

Searched the recipes and did not find one similar to this one. So . . .

I had 5 lb of Masa in the cupboard just sitting there so I searched for a Masa Harina Cornbread recipe and found this one. Never cooked cornbread from Masa before. Cooked in my new Lodge #6

Title: Masa Harina Cornbread
Chapter: Breads/Pasteries

Ingredients:
1 cup milk
1 teaspoon white vinegar (I just used buttermilk instead)
1 cup masa harina (I used Maseca)
1 cup all-purpose flour (I used White Lily but normally would mill my own from soft white wheat berries)
2 tablespoons granulated sugar (I just used 1 tbs. Don't like really swee bread)
1 teaspoon baking powder (I used 2 t)
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
2 tablespoons vegetable oil
4 tablespoons butter, divided

OK! OK! use lard!


Directions: Preheat oven to 350º F. In a small bowl or measuring cup, combine the milk and vinegar (Just use buttermilk). Set aside for 5 minutes. In a mixing bowl combine the masa harina, flour, sugar, baking powder, salt, and baking soda. Stir in the milk, eggs, and vegetable oil until well combined; set aside. Melt 3 tablespoons of the butter in an oven-proof or cast-iron skillet over low heat. Remove from heat and pour in the batter. (Do NOT stir!) Bake at 350°F for 20 to 25 minutes or until light golden brown and toothpick inserted in center comes out clean. Remove from oven and spread remaining tablespoon of butter on top of cornbread. Enjoy!

Edit: I had to use more than 1 c buttermilk to get the consistency I wanted.
