electrolysis for sure for the rust... but even after electrolysis I typically rub the item down with steel wool (usually a couple different grades, coarse to fine)... and these pans are hard to do that to... but they are beautiful when finished. If you look in the books (blue or yellow) the 240 is the more difficult to find and more valuable... so your gem pan collection is off to a very good start.
