Outset heat ring

One could surmise that heat rings, when used as such, coincided with the advent of the wood burning cook stove, in order to form a seal over the stove eye. But the rings, both outside and inset, could also serve as leveling devices for bottom-gated pans. We tend to see outside heat rings mostly on pans (read: skillets) from the late 1800s forward.
