Cold or Hot Pan for Corn Bread?

Thanks. I've been doing it all wrong. No wonder my cornbread has been sticking. Until tonight. I actually preheated the pan, and then sprayed some PAM on it. First time the cornbread actually came out whole without crumbling. Might just stick with that.
 
I also preheat especially if using a cornbread skillet or corn stick pan. They are mainly just display pieces anymore as I prefer to use a regular skillet. I heat it, coat with butter just before pouring in the batter. This seems to "crisp" the initial layer like searing a steak for me! When it's done I just dump it out!
 
Yes I had the same problem for a while. Then started preheating the pan. Works like a charm and the cornbread comes right out. Just had to adjust the cooking time.
 
I was taught to preheat the skillet before making cornbread so that is the way I have always done it. I have never had a problem with sticking.
