Corn Bread

So as you've seen from my past posts, I'm newer to using & collecting cast iron. Not trying to get run out of this forum, but why corn bread?!?

Anytime I search google for receipts to make/bake in cast iron the majority are cornbread. Why? Lots of other things to make, but cornbread dominates.

What is it about the stuff?

My guess would be because cornbread is "traditional." I'd would say, however, if you can bake it, you can bake it in cast iron. I wouldn't search for baking recipes specific to cast iron.
 
Maybe it's the other way around. The reason so many cornbread in cast iron recipes come up is that so many cornbread recipes specifically recommend (read: insist) cast iron be used to make them in.
 
Preheating a CI skillet and the oil so that the batter goes "Ssssssssssssssssss--s-s-s-s-s" when you pour it in will give you a crust that you can't get any other way.
