This is a favorite of ours at Calgary Stampede time... yahoo!

CHUCKWAGON CAST IRON SKILLET CORNBREAD​
1. Pre-heat oven to 375 F
2. In a cast iron skillet sauté over medium heat for about 10 minutes:
  • ½ cup butter
  • 1 red pepper diced
  • 2 green onions chopped
  • 3 slices of ham chopped (optional)
  • 1 or 2 jalapeno peppers finely chopped (optional, but does add a lot)
3. Mix the following wet ingredients together:
  • 1 ½ cups milk
  • 2 eggs
  • 1 tsp salt
  • 1 tbsp vinegar
4. Mix the following dry ingredients together:
  • 1 cup flour
  • I cup cornmeal
  • 2 tbsp baking powder
5. Mix wet and dry ingredients plus:
  • ½ cup frozen corn
  • 1 cup grated cheddar cheese
5. Dump the ingredients sautéing in the cast iron skillet into the above batter and mix
6. Coat the sides of the pan with the butter that is on the bottom and pour the batter into the pan
7. Bake for 25 mins and let cool for 15 mins before cutting and serving
