I am assuming all three photos are of the same pan. If the markings being described are on a pan not shown, I would say it's better to show and talk about one pan at a time.

The markings described are not discernable in the photo. There appear to be no notches in the heat ring. A later Lodge 3-notch might say 8 (at 12 o'clock) and SK below it, but incised not raised, and...

Although the expectation is that an unmarked Vollrath would have a sideways-oriented size number on the bottom, the consensus is that these are Vollrath.

Yes, one has the identical paddles that are leveled by the flats on the handle shanks like the one in the OP. The other has mirror image paddles with leveling pins at 3/9 o'clock.

There's not anything in the way of absorption possible with cast iron. The smoke point of currently produced Crisco shortening is 490F.
