Proper Spatula?

Hi All-

I did a search and found nothing, oddly, but what is the proper metal spatula to use on cast iron?

I remember reading where we want a specific edge on the spatula.

Straight leading edge with corners just rounded off enough so as not to be sharp and not scratch into seasoning. Good for both cooking and removing residue with the least negative impact.
 
Some swear by an old Ekco brand model with a hard rubber handle. New options include some from Dexter-Russell, nice but not cheap.

I will vouch for the Dexter-Russell. I've had the 4x2.5" one now for a couple of years and I love it.

Those look like great turners / spatulas, so I got the fish turner also.

I purchased a couple Dexter Russell spatulas and ended up getting rid of the others I had because I never used them anymore. Love them
 
I use the Ekco Flint (eBay) but the Dexter-Russell look like a nice updated choice.

PS: The Flint knives (not stainless) are the best when sharpened correctly as they will glide through a steak. No sawing required.
 
I've got a whole bunch of old Ecko, Flint, Ecko/Flint, Arrowhead, and misc Made in Japan spatulas with wood. plastic, and hard rubber handles. They all work equally as well.

I pick them up at thrift stores when I see them, usually 99cents to $1.50. Be sure and get Stainless steel. The chrome plated ones chip and rust. Also look for ones that the spatula part is actually riveted to the flat part that leads to the handle. Spot welds can/will break. Rivets can get loose, but they won't break.

Doug D. is right, As usual :wink: , straight edge, and rounded corners. I've found a few that used thinner sheet metal for the actual spatula part and they're very flexible, I like those the best.
