Default Cold or Hot Pan for Corn Bread?

Should the pan be warming up with the oven before I put the cornbread mix in? Or can I just put the mix into an unheated pan?

Preheated pan. A typical technique is to heat an amount of oil at the same time, to grease the pan, then to quickly stir the hot oil into the batter before adding to the pan and baking.

Thanks. I've been doing it all wrong. No wonder my cornbread has been sticking. Until tonight. I actually preheated the pan, and then sprayed some PAM on it. First time the cornbread actually came out whole without crumbling. Might just stick with that.

I also preheat especially if using a cornbread skillet or corn stick pan. They are mainly just display pieces anymore as I prefer to use a regular skillet. I heat it, coat with butter just before pouring in the batter. This seems to "crisp" the initial layer like searing a steak for me! When it's done I just dump it out!

Yes I had the same problem for a while. Then started preheating the pan. Works like a charm and the cornbread comes right out. Just had to adjust the cooking time.

Hot Pan for crispy corn bread. Heat 5-10, oil or butter, Heat 5-10 again then fill the pans. Those are Lodge pans but I also have Wagne Juniors which I like better.

I was taught to preheat the skillet before making cornbread so that is the way I have always done it. I have never had a problem with sticking.
