![]() I'm about to try the Chili Colorado recipe from the main site and was wondering what size of Dutch oven is best. I have a Le Creuset #28 (7 1/4 qts). Will that be be too large? The sauce only calls for 1 cup of beer, should I break the recipe into two smaller DO's or will the juices from the meat keep the chilli from drying out? Thanks Marc |

I typically make a half batch of the recipe in a 3.5 to 4 qt. DO. Sealing the top with foil helps maximize retained moisture. The result is typically quite thick, though. I would start as specified and adjust the liquid to your preference.

Thanks. Will give it a shot in the larger one and just watch the liquid level. More beer can't be a bad thing right?

Never a bad thing. It goes in my chili, black eyed peas, lima beans and in me while I'm cooking.
