Sautéing in butter some Dover sole filets seasoned with herbes de Provence...


And served with roasted Dijon fingerling potatoes and an arugula salad with roasted apple and fennel in a from-scratch Dijon vinaigrette...



I'd pay for this at a restaurant if I couldn't make it myself. Delicious!
 
Eric, it looks delicious! Now I'm hungry! What is the make ade size of the skillet? And is that an induction stove top you are cooking on?
 
I don't know what Dover sole is, but it looks mighty tasty!!
It's a mild, delicate fish. Actually the species sold in the States is usually a different breed than the original Dover sole found in the other side of the "pond"...
