Bacon, onion, potato and cheese

I wasn't sure how this would turn out, but it was pretty tasty. I had one onion and six small red potatoes that were getting a little old, so I threw them together in the chicken fryer and served them up with leftovers (chicken and black eyed peas) from a couple of nights ago.

Bacon first ...


Then I tossed it the onion (diced) ...


Then came the potatoes, a teaspoon of salt and a half teaspoon of pepper. I tossed the potatoes around to coat them in the bacon grease...


Twenty minutes in the oven (lid on) at 425 deg. Then I tossed in some Colby, cheddar and mozzarella cheese and put it back in the oven for five minutes.



It was mightly tasty.
