Made a beautiful prime rib, #10 3 notch, and some amazing dinner roles, # 9 SBL Griswold, for dinner last night. We also had bacon green beans and garlic mashed potatoes. Most amazing dinner ever. Hope everyone had a blessed Christmas.

It was so easy. The only adjustment I made was on the gravy. Did not use all of the recommended beef stock. It was cooked perfectly. I was told to be generous on the initial seasoning of salt and pepper that goes around the outside so I was. Worked out really well, the gravy required no additional seasoning. I used an instant read thermometer that stayed in the prime rib the entire time. I cooked it to 135, about 3 hours or so, then took it out, wrapped in foil completely and it rose to about 142. Let it rest about 30 minutes while everything else cooked. Best meal I have had in a while.

My whole Christmas Dinner was prepared using CI, from the ham to the stuffing to the noodles. That's all we own to cook with.

How about your recipe for the rolls? I can't seem to find a good one. Any reason I shouldn't try them in a muffin pan?

I have never done it in a muffin pan. Skillet seems to be just fine. I will post a recipe when I get home. I am out of town now for a wedding. Happy new year everyone.
