Anyone used a graphite sheet as the cathode?

Instead of steel or iron, has anyone used graphite? Is it safe for cookware? Graphite is just plain carbon.
 
I have not, but have noticed in pictures posted on the Forum that several others do.

Seems that a major advantage would be the anodes not rusting in the course of an e-tank session. Downside may be that the anodes dissolve over time, but I'm unsure what that time horizon is. I'm unsure what other pros/cons are associated with using graphite.
