Default Gluten Free Pineapple Upside Down Gems

My daughter has celiacs disease and is a very picky eater. I tried talking her into making these and ahe didnít even like the sound of it. Well long story short... I got her to help me make them. She loves them.

We used crushed pineapple due to the size of the gem pan. They stayed on the pan for the most part. Next time we will try pineapple chunks.

Hey Greg, I'm going to try that. They look delicious. We are gluten free in our house. I have a gem pan with twice as many cups so I'm thinking I may use the whole box. Did you use half a box as the recipe called for?

Tony, did you try this yet? If so how well did you like it? We recently made another batch, but we did it in skillets. We used one batch of batter in 2 #7 skillets. Worked just about perfect.
