Smoked Baked Beans

-2 lb great northern beans soaked overnite, drain and rinse
-In an 8 qt DO fry 8 strips chopped thick cut bacon until almost brown
-throw in 1 lg or 2 medium course chopped yellow onion to soften in the bacon fat, do not color the onion. season with S&P as it cooks
-deglaze with 2 cups strong black coffee-add one 12oz bottle of stout or porter beer
-add beans and fill with water to within 1 inch of the top of the DO
-1 T salt-2 t black pepper-1/2 to 1 t cayenne (more if you like)
-medium boil uncovered for 1 hour to reduce liquid by 1 to 1.5 inch
-cover and place in a 350F preheated oven 2 hours, should be just enough liquid to float the beans.
-beans should be tender and soft, add more water if needed to float beans
-remove lid, stir and place in smoker for 2 hours, stirring abt 4 times. I use hickory or apple wood.
Cut recipe ingredients in half if using a 5 qt DO
Enjoy with skillet cornbread and some smoked spare ribs.
