Default New Mexican Green Chile Taco

My mom used to make these every year when we got our Chile for the year. I grew to love them and now my kids are doing the same.
Ingredients: fresh roasted Green Chile, fresh corn tortilla, sharp cheddar, olive oil, salt.
Heat your round griddle to medium. Add a little oil and fry one side. Add the cheese on the uncooked side and then flip. Allow the cheese to melt and crisp a little, if your griddle is hot it won’t stick. Flip back over and then add your Chile and salt to taste. Fold into a taco and enjoy. There is a video tutorial below. Sometimes it is the simple things that satisfy the most. Enjoy!
