Homemade Breakfast Sausage

This is a few recipes combined, with increases in some of my favorites. I am still working out my final recipe, but it is pretty savory as is. Works well with ground turkey as well.

Recipe so far:

Ingredients:
16 oz ground pork
1 tsp salt
1 tsp thyme
1 tsp ground sage
1 tsp garlic powder
1 tsp onion powder
1 tb brown sugar
Large pinch red pepper seeds
¼ tsp nutmeg
¼ coriander
Rosemary to taste, a couple of shakes
¼ tsp black pepper

Mix and refrigerate, I usually make it the night before and it makes 8 thin sausage patties.

Anyone else have a good breakfast sausage recipe.

I might give that a try and leave the salt out.
I'm looking for more low sodium breakfast meat options
