Roast Chicken

I found a really nice thick cast aluminum bundt pan like this guy is using about a week ago. I bought it with the intentions of polishing it until it shined like a mirror. I think I will just put it to work roasting chicken instead. My old method of beer can chicken is history. This looks much easier.

That chicken looks good but I have been making beer can chicken for years and it's my favorite. My new pan only cost $2 so if it gets some stains I won't lose any sleep over it. I remember that spatchcock chicken post because in my head I called it Sasquatch chicken, it looks tasty. :D

A few potatoes cut into wedges and scattered around in the pan would probably help mitigate the smoke, and be a delicious accompaniment.

I don't usually turn the heat up that high when I make mine. I was more impressed with the use of the bundt pan than I was with the actual recipe.
