Bannock

Every now and then when I get a late night hankering for some warm and fresh bread, I'll crank up the oven, get out a skillet, and make up some ad-hoc bannock. I don't really use a recipe, although many exist. Just some flour, a pinch of salt, a pinch of baking power, and I like a little sugar in mine. Make a dough out of that and fry it in shortening or bacon fat.

I like your link too. However, 1/4" of lard is a little much. I bet those who got to move bannocks from stones to CI thought they were in heaven.

Bannock is a great late night snack. I don't use a recipe, so it is always a bit different. Mostly flour, a pinch of salt, a touch of baking powder and sugar. maybe some corn oil, some milk or buttermilk, and fry. Some butter and a drizzle of honey and sit back and watch that last scene of the movie.
