Default Holiday or Special Day Brunch 4/4

1st Course: The Scalloped Scallops recipe below on the next page with beverage of choice. (Champagne?)

Main Course: Eggs Benedict and fried green beans.

1 pkg. Knorr Hollandaise sauce mix or home made
2 English muffins split and toasted
4 slices peameal bacon or Canadian style bacon lightly fried
4 eggs poached
Sprinkle of paprika

1 lb. steamed cut green beans or 1 can
4 Tbsp butter
1/2 cup +/- plain bread crumbs

Melt butter in medium skillet, add green beans and bread crumbs. Stir or flip on med-low until evenly coated and toasted. Build your eggs and serve together on warm plates.

Note: You will be very tempted to add home fries, hash browns or another Benedict per serving. DONíT DO IT! You will leave the table satisfied. Just trust me.

2nd Course: A warm or grilled pastry of choice and bite size fruit on lettuce with your beverage of choice.
