Re: Steak Lover's Cookin'

I kinda did this tonight, except at 400*, with onions, and a couple additional seasonings, and it turned out great. I have to have my steaks medium-well though ... To each her own. ;)

Re: Tim's Hot Chicken Salad

Thank you all for the warm welcome back! Believe you me, it was painful having the majority of my CI packed up in storage for two months. Looking forward to getting back to cooking and sharing...

Re: Tim's Hot Chicken Salad

This recipe makes a LOT … like enough for a large family gathering buffet! It’s enough to fill approximately three #8 or #9 cast iron skillets, which is great because it’s a bit of a process to mix...

Tim's Hot Chicken Salad

Long time, no CI cook! I've been away for awhile because I moved, and had packed up almost all of my CI in prep for the relocation. We're all settled into our house now, and I am just getting back...

Re: Putting CI in Temp Storage

JB - you're funny ... "Dry" in Georgia? LOL nice try though.

Thank you all for the suggestions? They are all seasoned pieces. I was wavering between whether it made sense to wrap them in a dry...

Re: Hummus Crusted Chicken

I haven't made it again yet (DD keeps eating the hummus as soon as I buy it lol) but it's definitely on my "make again" list ... but I will use a lot more hummus next time! I can't get enough....

Putting CI in Temp Storage

I need to put some of my CI in temp storage for an upcoming move. I don't want to unpack a mess of rusty pans should any humidity sneak in the unit. Any tips or concerns for packing them up for...

Re: Why will this NOT come clean?

Thanks Bonnie! I will look for them at my local stores. I remember back in my teen restaurant days, we used those under a brick sorta thing to clean the steel grill.

With this "pot", after...

Re: Why will this NOT come clean?

Forgive my ignorance ... how would the old grease be reduced to carbon?

Re: Why will this NOT come clean?

I don't have an e-tank. Honestly, I don't do well with electricity of any kind (already been zapped a few times). So I rely on the HDOC method to strip CI. Just can't understand why it's not taking...

Why will this NOT come clean?

I've soaked (sprayed) this old CI 'bowl' with HDOC at least 4 times now for several days at a time, scrubbing in between turns, and the black stuff (which kind of feels powdery when dry) will not...

Cooking with alcohol & seasoning

I haven't cooked with wine or beer in my CI yet for fear it might strip the seasoning. Will it? :?: I love making chicken Marsala, and have a beef roast braising in beer in my E-CI as I type (and the...

Skillet lasagna (but I kinda cheated)

Made this last night for dinner. It was DELISH! I did cheat two ways though - I used penne vs lasagna noodles, and I wanted an easier clean-up than my massive #14 skillet, so I used my #30 LC...

Re: Cooking utensils for your cast iron

Upon further inspection, mine are actually bamboo.

Can these go in the dishwasher? I toss mine in there (on the top rack) out of sheer laziness since I focus post-meal clean-up on caring for the...

Re: Finex Cast Iron

And that, Ken, is exactly why I love the assist handle on some pieces. I do feel somewhat "manhandled" by the larger sized skillets that are heavy and have no assist. I made fried chicken last night,...

Re: Cooking utensils for your cast iron

Those are really beautiful Jeffrey! I agree they are a bit pricey but they do appear to be very nice quality. I would be curious to see how they wear over time.
