Should the pan be warming up with the oven before I put the cornbread mix in? Or can I just put the mix into an unheated pan?

That's funny.

Lodge is fine, it's what piqued my interest in cast iron in the first place. But there are valid reasons why people prefer lighter and/or smoother pans.

Perhaps I overstated the condition of the pan. I suppose it's not that bad, it's just that the cooking surface is the least smooth I've personally experienced in a cleaned up vintage piece.

Use the spatula to scrape off stubborn food residue.



The seasoning changes over time. It's a continual process, not a one time end result.

Toss that plastic scraper and get yourself a stainless steel spatula. The spatula won't hurt anything. It's seasoning, not teflon.
